Asked by lhflmd. Answered on 8th January 2026

Full question

When making the Salmon Kedgeree, I find the salmon to be slightly bland, even after adding the fish sauce. Can I add salt to the poaching liquid?

Our answer

Niggella's Salmon Kedgeree With Lime And Coriander (from NIGELLA BITES mixes spiced cooked rice with poached salmon, hard-boiled eggs and fresh coriander.

The salmon is poached in the oven, rather than on the hob, as this is a gentle and fuss-free way of cooking salmon. The poaching water is flavoured with makrut lime leaves, as the salmon is added to the rice that has been seasoned with fish sauce. However, palates do vary and we don't see any reason why salt can't be added to the poaching liquid. For this amount of water, we would suggest ½ to 1 teaspoon of salt, or adjust this to your own taste.
