Full question
The Spatchcock Chicken with Miso and Sesame Seeds looks delicious! Can it be done in pieces in the airfryer? If so, for how long and what temperature?
Our answer
Nigella's Spatchcock Chicken With Miso And Sesame Seeds (from AT MY TABLE) has chicken that is marinated in an umami-rich combination of miso, sesame oil, soy sauce and fish sauce. As the chicken cooks, the marinade caramelises in the heat to give a salty but slightly sweet coating. Spatchcocking (or butterflying) a chicken involves removing the backbone and laying the chicken flat on a baking sheet. The chicken cooks more evenly and quickly than roasting a whole bird.
If you have a large capacity air fryer then you may be able to cook the whole spatchcocked chicken. Otherwise, you could cut the chicken into 8 pieces (or ask your butcher to do this for you). An air fryer is essentially a small fan oven, so you should set the temperature at 180c (350F). We suggest enclosing the whole chicken, or the chicken pieces, in a loose foil parcel rather than just covering with foil, as the foil will probably become dislodged. Crimp the edges of the package together tightly so that the juices do not run out. If you are cooking a whole chicken then cook for 40-45 minutes, or until the juices from the thickest part of the chicken run clear. For chicken pieces it is likely to be 25-30 minutes, or until the juices from the largest piece run clear. Carefully unwrap the spatchcocked chicken or pieces of chicken, return it or them to the air fryer, brush with some of the juices that have collected in the foil package and cook at the same temperature for a further 10-15 minutes, until the skin is crisp and burnished then brush with a little more of the juices from the foil package, sprinkle over the sesame seeds and cook for a further 5 minutes, until the sesame seeds have toasted slightly. Keep an eye on the sesame seeds, as they can burn easily in an air fryer. However, please note that as we have not tried an air fryer method ourselves, we are unable to guarantee the results.
