Nigella's Pizza Rustica (from HOW TO BE A DOMESTIC GODDESS) is a deep pie filled with a mixture of pork sausage, prosciutto and a mixture of cheeses. The word "pizza" in Italian can be used to describe any type of pie. It is not clear exactly at which stage the pie should be frozen. The assembled but unbaked pie can be frozen (without the glaze) and then defrosted for 24 hours in the fridge before glazing and baking. As the pie will be very chilled please make sure that the pie is piping hot in the centre before removing it from the oven and you may find it needs an extra 10 to 15 minutes baking time at 180°C/160°C fan/350°F.

The baked pie can also be frozen in its tin. Again remove the pie from the freezer the day before you want to serve it and thaw it for 24 hours in the fridge. We suggest serving it cold as reheating the pie will take a long time and could leave it slightly dry in the centre. You can remove the pie from the fridge an hour before serving to allow it to lose its fridge chill, but do not leave it out of the fridge for more than a total of 2 hours. To freeze the pie, baked or unbaked, wrap the tin tightly in a double layer of clingfilm (plastic wrap) and a layer of foil and freeze for up to 3 months.
