Full question
Can the Banana Bread be frozen after baking? If so, is there anything I would need to do on defrosting to ensure it tastes as good as it can?
Our answer
Nigella's Banana Bread (from HOW TO BE A DOMESTIC GODDESS) is a time-honoured loaf that is studded with walnuts and rum-plumped sultanas or raisins. It is a perfect recipe for using up bananas that have become too brown to eat and is delicious mid morning or in the afternoon with a cup of tea or coffee, or for a slightly indulgent breakfast.
The loaf freezes well and a whole loaf can be frozen once it has coooled completely. Wrap the loaf tightly in a double layer of food wrap and a layer of foil and freeze for up to 3 months. To thaw the loaf, unwrap it and leave it on a wire rack at room temperature for about 4 hours, then store in an airtight container in a cool place and eat within 5 days. You can also freeze individual slices of the banana bread. Wrap each slice in food wrap and then put into a resealable box before freezing. Slices tend to be slightly more susceptible to freezer burn, so we would suggest freezing the slices for up to one month. The slices will take about an hour to thaw at room temperture and are best eaten on the same day.
