I need to make the Forgotten Pudding for 40 people but don't have enough swiss roll tins. Can I make the base up and freeze it before defrosting and adding the fruit and cream?
Our answer
Nigella's Forgotten Pudding from NIGELLA EXPRESS) has a marshmallow-like base made from whisked egg whites and sugar. It is cooked very slowly overnight in an oven that has been heated up but is then turned off and "forgotten", hence the name of the recipe.
Unfortunately we don't think it is a particularly good idea to freeze the base of the Forgotten Pudding. It it seems from the question as if the base would need to be removed from the tin before freezing, but it would be very difficult to wrap the base without damaging it as the base is incredibly tender and delicate. As the base is already slightly sticky, it is also very possible that when it is defrosted, it will deflate a little and you will get beads of moisture on the surface. Finally, cooked egg whites can also become a little rubbery when they are frozen, which would spoil the texture of the Forgotten Pudding. Instead, we would suggest maybe trying to borrow some extra Swiss roll tins and make the bases the night before you need to serve them.
