Nigella's Frangipane Mince Pies (from HOW TO BE A DOMESTIC GODDESS) are mince pies that are topped with frangipane, a mixture of butter, sugar, eggs and ground almonds (almond flour or almond meal), rather than regular shortcrust pastry.

We suspect that it possible to freeze the pies as frangipane usually freezes quite well. If you want to freeze the uncooked pies then you would need to freeze them in the the tart pans first. The pans used in this recipe are shallower than muffin tins, and are now called bun tins, which means that once the mince pies have frozen solid, you should be able to lift them out and transfer them carefully to freezer boxes and return to the freezer (trying not to dislodge the flaked almonds) for up to 3 months. You would need to bake the pies from frozen, putting them back in the original pans before putting them in the oven and adding 3-4 minutes to the cooking time. You may find it easier to freeze the baked pies. Once they have fully cooled, transfer the pies to freezer boxes and freeze for up to 3 months. To thaw the pies, put them on a wire rack at room temperature for 2-3 hours. You can warm the defrosted pies in a low oven for 5-10 minutes before serving.
