Nigella's Pear, Pistachio And Rose Cake (from AT MY TABLE) is a moist cake made with ground almonds and pistachios and pureed pears. The cake will keep in a cool place in an airtight container for up to 5 days. If you want to make the cake ahead, for the best results we suggest baking the cake a day in advance, storing it in an airtight container and decorating just before serving.

It is possible to freeze the cake without the glaze and decoration, though as the cake is very moist the top of the cake can become a bit sticky when the cake defrosts. Let the cake cool completely in its pan then unspring the sides, but leave the cake on the pan base. The cake is very tender so needs the base of the pan to give extra support. Wrap tightly in a double layer of food wrap and a layer of foil and freeze for up to 3 months. To defrost the cake, unwrap it, cover the top loosely with food wrap and leave in a cool place overnight. Remove the food wrap carefully as it can stick to the top of the cake, then brush with the melted jam and decorate.
