Can I freeze the Christmas Puddini Bonbons in advance and add the white chocolate topping when I defrost them?

Our answer

Nigella's Christmas Puddini Bonbons (from NIGELLA CHRISTMAS) are truffle-like treats made from leftover Christmas pudding, dark (bittersweet) chocolate, liqueur and a little golden syrup. The bonbons are perfect to eat in the gap between Christmas and new year, or as home-made Christmas gifts.

The bonbons will keep in a cool place for up to 2 weeks, so you can make them a little in advance. We have not tried to freeze them ourselves but we do not see any reason why they can't be frozen without the decoration on, as the ingredients all freeze quite well individually. We would suggest putting the bonbons in a single layer in an airtight container (or containers) and freezing for up to 1 month. Thaw the bonbons overnight in the fridge then either store in the fridge or transfer them to a cool place. If you try to thaw them too quickly at room temperature then you may get moisture on the surface, which could make them a little too sticky. However, as mentioned, as we have not tried this ourselves, we are unable to guarantee the results.
