Looking at the recipe for No-Churn Coffee Ice Cream: Can you interchange mililitres and grams in the recipe? I.e. is 300ml the same weight as 300g? And can I use instant coffee powder instead of espresso powder?

Our answer

Nigella's One-Step No-Churn Coffee Ice Cream (from NIGELLISSIMA whisks together (sweetened) condensed milk, double (heavy or whipping) cream, espresso powder and coffee liqueur. It uses 300ml (1 1/4 cups) of cream and 175g (2/3 cup) of the condensed milk. In terms of interchanging grams and millilitres, it really depends on the liquid involved. For liquids that are low viscosity, such as water, milk and cream (i.e. that are fairly thin), they can be measured either by weight or volume with the same results. So 300ml of cream will weigh 300g. However, liquids that are quite thick and viscous, such as (sweetened) condensed milk, honey and maple, golden or corn syrups, are denser than thinner liquids and you can't interchange weight and volume. The 175ml of condensed milk actually weighs 200g and not 175g. If you are unsure, it is best to stick to the unit measurements specified in the recipe.

For the espresso powder, you can use coffee powder if it is very fine powder and not granules. If possible, use a very strong coffee powder. If it is a mild coffee then we suggest that you whisk the powder into the rest of the ingredients until just combined and taste and add a little extra coffee powder if you like, bearing in mind that freezing will slightly mute the flavour of the coffee.
