Nigella's Forgotten Cookies (from AT MY TABLE) are meringue cookies that are left to bake in a slowly cooling oven. The cookies include a combination of chopped pistachio nuts and chocolate chips. You could omit the chocolate chips, though the cookies may be a little less interesting. You could use milk chocolate instead of dark (bittersweet) chocolate if you don't like dark chocolate.

If you wanted to replace the chocolate chips then you need to use ingredients without any moisture, so you could add extra chopped nuts, such as extra pistachios or chopped roasted hazelnuts.
