Can I Make A Lemon Olive Oil Cake?

I have a jar of lemon curd I’d love to use in a non-chocolate equivalent of The Chocolate Olive Oil Cake. How do I use this instead of the chocolate to make a moist lemony cake that similarly has almond flour as a basic ingredient for someone with a wheat intolerance?

Our answer

Nigella's Chocolate Olive Oil Cake is a moist chocolate cake that can be made gluten free with ground almonds (almond meal) and can also be made with regular plain (all-purpose) flour. Unfortunately there would be far too many adjustments needed to the recipe to convert the cake to using lemon curd.

Instead, we would suggest looking at Nigella's Lemon Polenta Cake recipe. This recipe uses a combination of ground almonds and polenta, so is gluten free. If you look in the "Additional Information" box at the bottom of the recipe page you will see that the cake can be converted from using butter to using olive oil and the cake is definitely moist and lemony. Whilst the recipe itself doesn't use lemon curd, we would suggest maybe brushing on a thin layer as an extra glaze, once the cake has absorbed the lemon syrup and has cooled.
