Can I substitute tofu for prawns and vegetable stock for the chicken concentrate in the Thai Noodles With Cinnamon And Prawns recipe, as I’m vegetarian? The flavours sound incredible!

Nigella's Thai Noodles With Cinnamon And Prawns (from SIMPLY NIGELLA) is a recipe inspired by a dish that Nigella ate while on holiday in Thailand. It is also very easy and quick to make.
We don't see any reason why you could not make a vegetarian version of the dish. For the vegetable stock, just note that the proportions of chicken stock concentrate to water mean that you use, in effect, a double strength stock, so please make sure that you use a vegetable stock that is of a similar strength. For the tofu you would probably need to use firm tofu (that has been thoroughly patted dry), so that it doesn't break up when you toss it with the noodles. As tofu only needs heating through, rather than actual cooking, we would suggest bringing the sauce ingredients to the boil (at step 3), and then simmering for 3-4 minutes before adding the noodles and tossing for a minute or two, then add the tofu and just let everything warm it through for a minute or so before serving. If you have time then you could pan fry the tofu in a litttle vegetable oil before using it, to get a golden crust and more flavour on the outside. Or, for ease, use tofu puffs, which are deep-fried pieces of tofu that you can buy in many Asian supermarkets.
