I only have access to regular globe eggplants, Can I use them instead of baby eggplants for the Baby Aubergines with Oregano and Red Onion and how should I prepare them? Also, I have no oven, only an air fryer and a stovetop burner. Can I make this with an air fryer?

Nigella's Baby Aubergines With Oregano And Red Onion (from NIGELLISSIMA) roasts halved baby aubergines (eggplants) that have been tossed with olive oil and oregano. The warm aubergines are then served with a tangle of quick-pickled red onions and a scattering of fresh oregano.
If you don't have baby aubergines then you could use regular or globe aubergines or even striped or graffiti aubergines. You will probably need 2 medium-sized aubergines with a combined weight of around 500g (1 pound 2 ounces). You can either cut the aubergines into large chunks or cut them in half lengthways and then cut each half lengthways into 2-3 pieces, to give fat spears of aubergine. You can then roast the aubergines as described in the recipe. If you are roasting chunks of aubergine then start checking them after 10 minutes. You could cook the aubergines in an air fryer. Toss the aubergines chunks or slices in the oil and herb mixture, making sure that they are very well coated and cook in an air fryer at 220c/425F for 10 minutes. Turn the slices over (or give the basket a good shake if the aubergine is in chunks) and cook at the same temperature for another 5 minutes, until the aubergines are soft and golden brown. You can cook for a further 2-3 minutes if the aubergines are not quite soft enough.
