Full question
How can I make the Meattza recipe without eggs? I’m egg intolerant, but would very much like to make it.
Our answer
Nigella's Meatzza (from NIGELLISSIMA) is a culinary pun of meat-pizza, with the base being made from a minced (ground) beef meatball mixture, instead of dough, which is topped with tomato sauce and mozzarella before being baked in the oven. It is quick to make and loved by most people.
The meat base includes beaten eggs and the eggs serve two purposes. The first is to add moisture to the mixture and the second is to help the meat base bind together, making it firmer when cooked and easier to cut and serve. If you can't use eggs then we would suggest soaking the breadcrumbs or oats with 4 tablespoons (60ml/¼ cup) of milk for about 10 minutes before adding this mixture to the minced beef. This will help to prevent the meat base from drying out during cooking. Soaking the breadcrumbs or oats will also help the mixture bind together a little bit, but not as effectively as eggs would. So you will need to be slightly more careful when serving the cooked Meatzza. Use a wide spatula to help to lift wedges from the pan, but bear in mind that the wedges could still break up slightly.
