Can I Make Chocolate Guinness Cupcakes?

Our answer

Nigella's Chocolate Guinness Cake (from FEAST) is a moist chocolate cake that is easy to make as it uses the "melt and mix" method. It is also the COOKALONG recipe for March 2023.

We have not tried the cake as cupcakes ourselves, but we know from previous Cookalong entries and from Community members that it is possible to make the cake into cupcakes. As this is a fairly large cake we estimate that it will make between 18 and 24 cupcakes. The oven temperature should remain at 180c/160c Fan/350F and the baking time is liklely to be 20-30 minutes, depending on how deep the cupcakes are. The cupcakes are baked when they are risen, firm to the touch and a cake tester inserted into the centre of one of the cupcakes in the middle of the pan comes out clean. We would suggest lining the cupcake or muffin pans with paper cases, to prevent the cakes from sticking to the pan. You may need to make extra frosting to top the cupcakes, we estimate that you would likely need 1.5x the recipe quantity for the cupcakes or up to 2x if you want very generous swirls.
