Nigella's No-Churn Margarita Ice Cream (from NIGELLA EXPRESS) takes the ingredients from a classic margarita cocktail and turns them into a sprightly ice cream. The alcohol in the tequila and triple sec helps to stop large ice crystals forming as the ice cream freezes, giving it a smoother texture.

It is possible to use whipping cream instead of heavy or double cream and this is actually mentioned in step 2 of the method. If you are using heavy or whipping cream, we suggest that you whip the cream on its own first to soft peaks and then whisk in the lime, tequila, triple sec and sugar mixture. Whipping and heavy creams have a lower fat content than double cream and don't whip as easily, so if you add the tequila mixture before whipping then it can be quite difficult to get the mixture to whip properly and you will end up with a denser ice cream. But if you whip the cream first it incorporates air into the cream and overcomes this problem. Double cream has a high fat content, which means that it whips without problems even with other ingredients added.
