Marshmallows For Chocolate Mousse

Asked by SaChow. Answered on 1st July 2020

Full question

Hello. I wanted to make Nigella's pavlova but I think I opened the oven too soon and the result is a base that is flat and chewy. I was wondering if I could use this chewy base as a replacement for the marshmallows in Nigella's Instant Chocolate Mousse recipe? Is that a possibility? If not, what can I use this base for?

Our answer

Nigella's Instant Chocolate Mousse (from NIGELLA EXPRESS) is made by melting marshmallows with chocolate, butter and water and then stirring this into whipped cream. It is the gelatine in the marshmallows that helps to set the mousse quickly. Unfortunately as the pavlova meringue does not contain any gelatine it will not set the mousse in the same way. Also the crisp crust of the meringue will not dissolve easily in the mixture.

There are other ways to use a meringue and we would suggest crushing it up and trying either Nigella's Eton Mess or the Meringue Gelato Cake With Chocolate Sauce. Alternatively, use the crushed meringue as a topping for ice cream.
