I have made the Triple Chocolate Buckwheat Cookies many times, but I want to make them vegan as well. Can I substitute the eggs with flax and water?

Nigella's Triple Chocolate Buckwheat Cookies (from SIMPLY NIGELLA) are made with buckwheat, which is a gluten-free grain. The buckwheat also has a slightly smoky, nutty flavour that works well with chocolate.

As the cookies are gluten-free they also have a slightly shortbready, frangible texture. Because of this, it can be very difficult to adjust the recipe to be vegan as well, as the cookies may simply not hold together after baking. It is fine to swap the butter for a dairy-free baking block, but if you are replacing the egg then you would likely also have to adjust the ratios of fat and sugar. Instead, we would suggest considering the Mine-All-Mine Sweet And Salty Chocolate Cookies. These do not contain egg and you can use a dairy-free baking block instead of butter. In addition, we have tried these cookies with gluten-free plain (all-purpose) flour, so they can be made in gluten-free form. However, make sure the gluten-free cookies are completely cold before removing them from the baking sheet. We have not tried making these cookies with buckwheat flour, but in theory it should work. As the base recipe makes two cookies, you could certainly try to see if it does work with buckwheat flour, and if it does then you can easlly scale up the recipe to make a larger batch. Otherwise, we would suggest using a gluten-free plain flour blend instead.
