Sweetcorn Cakes

Firstly, boil the sweet corn if frozen. I usually boil the kettle for the water so then it only takes about three minutes. If not using boiling water, wait until the water reaches boiling. While the sweetcorn is cooking, sieve the baking powder and flour into a large mixing bowl. Beat the egg well, then mix into the flour. When the sweetcorn is ready, drain the water and add the sweetcorn into the bowl and mix well. when the mixture combined, heat a little olive oil in a pan. the add a few teaspoons of mixture to make little burgers. Press them down and give about five minutes to cook, flipping when ready. Take out and put on top of a bed of salad.

- 1 handful sweetcorn (one large handful per person)
- 1 ounce self-rising flour (per person)
- 1 pinch of pepper
- 1 egg (per person)
- salt (optional)
- any vegetables (such as peppers or carrots, chopped - cook vegetables lightly first)
