I like to make the Sweetcorn Pudding recipe in Nigella Bites. Unfortunately I can no longer find tins of creamed corn in the supermarkets in the UK. How can I adapt the recipe to make it without?

Nigella's Sweetcorn Pudding (from NIGELLA BITES) is not a sweet dessert but a side dish that is baked. It is similar to a baked custard or an airless soufflé and goes particularly well with ham. The dish uses a combination of regular canned corn and creamed corn, as well as milk, cream and eggs.

Canned creamed sweetcorn (or cream-style corn) actually does not contain any cream, but corn in a thickened liquid that is also seasoned with salt. You can still buy creamed corn online. It is tricky to suggest a replacement as we are not sure how much the commercial thickeners help to stabilise the pudding. You could try using additional drained corn and some water and cornflour (cornstarch). We would guess at using around 100ml water and 320g drained canned corn. Mix 2 tablespoons of the water with 2 teaspoons cornflour to make a paste then put this in a small saucepan and add the remaining (70ml) water. Heat this mixture, whisking constantly, until the liquid thickens and comes to a boil. Remove from the heat and cool, then add the 320g drained canned corn and use this instead of the creamed corn in the recipe. Increase the salt in the recipe to 3/4 teaspoon total. But please note that we have not tried this as a subsititue for creamed corn in the recipe and cannot guarantee the results.
