I am keen to try Nigella’s Vodka Marinated Steak but only want to cook this for two people. By how much should I reduce the marinade ingredients and beef stock in order to do this?

Nigella's Vodka Marinated Steak (from FEAST) marinates thick-cut rump steak (for the US this cut is called sirloin steak) in herbs, spices, vodka and olive oil. The vodka helps to tenderise the meat slightly and the marinade will add flavour and seasoning. The steak is pan-fried and Nigella prefers to serve this steak rare, but you can cook it to your own liking. After resting, the steak is sliced thinly and served with a pan sauce made from the marinade, beef stock and any resting juices from the steak.
The recipe serves 6, using 700g/1 1/2 pounds steak. If you are making the dish for 2 people then you are likely to need 300-400g (12-14 ounces) steak. It is quite difficult to get a thick cut steak that is less than this weight and most UK supermarkets sell thick cut rump steaks at around these weights. We would suggest that you make a half quantity of the marinade by halving the quantities of the ingredients listed. When you cook the steak, it won't need to be cooked for as long as the steak in the recipe, and you should cook it to your own liking by searing in a hot frying pan (you probably won't need to cover the pan and cook for longer as there is a smaller amount of meat). Strain the marinade into a measuring jug and add enough beef stock to reach the 75ml (1/3 cup) mark. When you deglaze the pan, make sure that the sauce ingredients come to a full boil, as you are using the leftover marinade.
