I'd love to make the Date And Marmalade Cake, but am not sure how to stop it from being so damp? Can I reduce the liquid?

Nigella's Date And Marmalade Christmas Cake (from SIMPLY NIGELLA) is a gluten- and dairy-free rich fruit cake that is perfect for Christmas but equally delicious at any time of the year. We would mention that the cake itself is not actually that "cakey" since it packed full of nuts and dried fruits. But may people adore the damp almost Christmas pudding texture and flavour of the cake.
The fruits are simmered in a mixture of black tea and marmalade. This plumps up the dried fruits so that they are tender and moist. You could use a wide saucepan to simmer the mixture in, as this will evaporate a bit more of the liquid, but we would be very wary about reducing the amount of liquid overall as this could make the cake very dry and crumble later. If you want a gluten-free Christmas Cake with a slightly more cake-like texture then we would suggest maybe trying Nigella's Gorgeously Golden Fruit Cake instead.
