I love the flavour of the Coq au Riesling, however, I find that the liquid is very 'thin'. Suggestions on the best way to thicken it would be much appreciated.

NIgella's Coq au Riesling (from NIGELLA EXPRESS) is a speedier "blonde" version of the traditional red wine coq au vin. Skinless, boneless chicken thighs are simmered with riesling (or a similar white wine), bacon and oyster mushrooms until cooked through, with an optional splash of cream added at the end.
The sauce for this dish is not supposed to be thick and should be spooned over noodles, mashed potatoes or rice. However, if you wanted to thicken the sauce slightly then it would be easiest to use cornflour (cornstarch), mixed with cold water and then some of the warm sauce before being whisked into the pot and simmered for a couple of minutes. We would suggest using 1 tablespoon cornflour and you can use a little more if you like, but please bear in mind that the sauce should be on the thinner side and not thick. If you have made the dish in advance, whisk in the cornflour once you have reheated the chicken and sauce.
