Asked by totati. Answered on 22nd September 2022

Full question

What is “cream” in the topping ingredients for the Apple And Blackberry Kuchen? I live in US and there are not as many ingredients available as in Europe. Thank you!

Our answer

Nigella's Apple And Blackberry Kuchen (from NIGELLA BITES) has a sweet, rich yeasted dough as a base. The dough is glazed with an egg wash before cooking, to give the exposed areas of dough a rich, golden colour as it bakes.

The egg wash is made from an egg that is beaten with a tablespoon of cream, which helps to loosen the egg mixture. Nigella has not specified the type of cream as it can be any type you have in the fridge - double, heavy, whipping, single or light. For the US you can also use half-and-half. If you don't have any cream at all then a tablespoon of milk could be used as a substitute, though is slightly less rich.
