Full question

I don’t have self-raising flour that is required in the topping for the Apple and Blackberry Kuchen. Can use regular flour? Thank you!

Our answer

Nigella's Blackberry And Apple Kuchen (from NIGELLA BITES) has a two-layer topping. There is a layer of fruit and then a layer of streusel-like crumble.

The crumble is made with self-raising flour and ground almonds (almond meal), as this helps to give a slight lift to the crumble. It is possible to use plain (all-purpose) flour instead, just mix it with ½ teaspoon of baking powder. Put the flour and baking powder together in a bowl and whisk with a fork to combine, before adding the almonds and cinnamon and continuing with the recipe.
