Hello, can I use canned pumpkin in the Pumpkin and Goat’s Cheese Lasagne? Also, are there any good alternatives to mozzarella? Thank you!

Nigella's Pumpkin And Goat's Cheese Lasagne (from NIGELLA CHRISTMAS) is an easy to assemble lasagne that has chunks of pumpkin or butternut squash that are cooked until soft and then layered with tomato sauce, goat's cheese and ricotta and sheets of pasta. We would prefer not to use canned pumpkin as these all tend to be pumpkin purée rather than pumpkin chuncks and the pumpkin should be soft but still retain some of its shape and texture. However, you could use frozen chunks of pumpkin or butternut squash and we would suggest using these diectly from frozen.

The mozzarella on top of the lasagne adds a creamy and slightly stretchy topping and you could use 250g (9 ounces) of the firmer "pizza" type of mozzarella or even shredded or ready grated mozzarella instead of the fresh mozzarella. If these are impossible to find then we would suggest using a mild Cheddar cheese.
