Full question
Can I substitute dried chanterelles for the dried porchini in the Fettuccine with Mushrooms, Marsala & Mascarpone? Currently my favourite recipe and I found a bag of dried chanterelles in the pantry.
What other recipes can I use dried Chanterelles in?
Our answer
Nigella's Fettuccine With Mushrooms, Marsala And Mascarpone (from NIGELLISSIMA) is a comforting but quick-to-prepare dish that uses mostly storecupboard ingredients. The marsala and dried porcini mushroom soaking liquid add extra flavour to the milky mascarpone sauce.
Dried chanterelle mushrooms have a golden hue and slightly fruity flavour but lack the bosky depth of porcini mushrooms. However, if you have dried chanterelles in your pantry then you could use them for the dish, just bear in mind that the flavour of the sauce will be lighter and creamier. Dried porcini mushrooms are usually dried slices of mushroom, whereas chanterelles tend to be dried whole mushrooms, or chunks of mushroom. So the chanterelles may take slightly longer to soften than the dried porcini mushrooms. Make sure that the mushrooms are soft enough to chop easily before you strain the soaking liquid into the mascarpone. Dried chanterelles, and other dried mushrooms, can be rehydrated and added alongside fresh mushrooms in many dishes. They would probably be a nice addition to Nigella's Chicken, Mushroom and Bacon Pie.
