Full question

Can I use dried dill for the Turkish Eggs instead of fresh? I don't use enough of it to warrant buying a whole bunch.

Our answer

Nigella's recipe for Turkish Eggs (from AT MY TABLE) serves poached eggs on top of a warm garlic yogurt. It is a light but comforting dish that is best served with some good bread for dipping. A few fronds of dill are scattered on top, to give an attractive appearance as well as a very slight anise flavour.

If you don't have fresh dill then we would prefer not to use dried dill as the dried form is better if cooked into a dish. If it is just sprinkled over it has a different texture to fresh dill and can also have a more concentrated flavour. You can omit the dill completely if you don't have any on hand. Alternatively, you could use another soft, fresh herb that you have available or particularly like, such as coriander (cilantro), chives or parsley. Chop the herbs as necessary and use just a light sprinkling on top of the eggs.
