Can I Use Less Marzipan For The Simnel Cake?

Full question

I made the Simnel Cake and the marzipan in the centre didn't melt into the cake mixture but crystallised and was hard. Can I use less?

Our answer

Nigella's Simnel Cake is a light fruit cake that has a layer of marzipan baked into the centre. The cake has slightly more marzipan than some recipes as Nigella is very fond of marzipan. However, many people have baked this cake over the years and it was a Cookalong recipe in March 2016 and we have not come across this particular problem before.

It is hard to tell why the marzipan crystallized without knowing how the marzipan was made. However, if you prefer to reduce the amount of marzipan in the centre of the cake then that is possible, but we would suggest not going below 250g of marzipan.
