The Lunchbox Treats look so good! Could I substitute pale malt extract instead of the rice malt syrup?

Nigella's Lunchbox Treats (from NIGELLA EXPRESS) are no-bake treats made with a mixture of cornflakes, oats and Rice Krispies. The cereals are bound together with a sticky-sweet mixture of chocolate, butter and rice malt syrup. The rice malt syrup also boosts the malt flavour in the cornflakes and Rice Krispies.

Pale malt extract is also known as liquid malt extract and is extracted from barley. It is most commonly used in brewing beers. We assume it is the light version that you are referring to, as liquid malt extract comes in light/pale, amber and dark versions. Liquid malt extact is a thick syrup with about 20% water content, which is similar to the water content in rice malt syrup (also known as brown rice syrup). So in theory you could use light/pale liquid malt extract for the Lunchbox Treats. However, we cannot guarantee that the results will be exactly the same as the flavour of liquid malt extact could be slightly different to rice malt syrup and may be stronger than the rice malt syrup.
