Nigella's Gluten-Free Apple And Blackberry Pie (from SIMPLY NIGELLA is made with gluten-free flour and xanthan gum. The xanthan gum makes it slightly easier to roll out the pie dough. You can replace the butter and sour cream with plant-based alternatives. Instead of the butter we would suggest using a plant-based alternative but it should be the type that comes in a block (such as a Flora Unsalted Plant Block B+tter in the UK), rather than the spreadable type that comes in a tub or container. The plant-based alternatives in a tub are formulated to be spreadable and can soften too quickly in the food processor, even after freezing. You don't want the fat to be completely blended into the dough but to remain in tiny pieces, as this gives a flakier crust.

Instead of the sour cream we would suggest using a plant-based yogurt alternative, but make sure that it is an usweetened and unflavoured yogurt. For the filling you can, again, use a plant-based alternative to butter. We are not sure if you are able to use the egg white or not for the top of the pie, but if you can't use egg then brush the top of the pie with a plant-based milk and sprinkle over the sugar.
