Can I use rice flour instead of plain flour in Nigella's Luscious Vegan Gingerbread? I have a vegan friend who is gluten intolerant and would love to make it for them.
Our answer
Nigella's Luscious Vegan Gingerbread from COOK, EAT, REPEAT) is a sticky gingerbread cake that is made without eggs or dairy ingredients but still has all of the flavour and texture of a more traditional gingerbread cake.
We did try to make the cake with a gluten-free flour (baking blend) and unfortunately we found that the results were a little disappointing as the cake sunk quite a lot in the centre and had a very dense texture due to the lack of both eggs and gluten. So we can't recommend making the cake with other gluten-free flours. However, we can recommend the gluten-free and vegan version of the Mine-All-Mine Sweet And Salty Chocolate Chip Cookies. The recipe makes two large cookies but can be scaled up easily. Please refer to the notes below the main recipe method to see how to convert the recipe to vegan and gluten free and do let the cookies cool completely before trying to remove them from the baking sheet.
