I'd love to make Nigella's Honey Pie, as featured in today's email, but I never have full-fat milk on hand. Can I use semi-skimmed in the pastry or will it spoil it? Many thanks.

Nigella's Honey Pie (from SIMPLY NIGELLA) has a rich and salty-sweet filling that sits in an easy to make crust. The crust is not rolled out but instead is pressed into the tart pan. This is not only a low stress method, but it also produces a tender crust that has minimal shrinkage when it is baked.
The crust istelf is made with a combination of olive oil and milk. We would if possible prefer to use whole milk as it has a higher fat content, usually 3.25% but can be as high as 5%, vs. semi-skimmed (reduced fat) milk that has a fat content of 2%. More fat and less water usually makes a more tender pie crust. However, as the amount of milk used is not that great (60ml/1/4 cup), the difference between using whole milk and semi-skimmed is less than 1 gram of fat. So we suspect that you can use semi-skimmed milk for the crust in this particular case.
