Chicken In A Pot In The Oven

Asked by CatherineQueeb70. Answered on 17th March 2021

Full question

I'm cooking Chicken In A Pot, but doing it totally on the stove top because my oven door is broken. What is the function of putting it in the oven, versus doing the whole thing on top of the stove?

Our answer

Nigella's Chicken In A Pot With Lemon And Orzo (from AT MY TABLE) braises a whole chicken in the oven and then uses the flavourful cooking liquid to cook some orzo to give a complete one-pot meal.

The chicken is cooked in the oven as it is a very gentle method of cooking and means the chicken is cooking in very gently simmering liquid, until it is truly tender. It is also a fairly hands-off way of cooking as the heat remains constant and even in the oven. It is possible to poach the chicken on top of the stove but needs a bit more attention as the chicken should not boil as it can become tough. So the pot will need more checking in the early stages, to make sure that it doesn't boil and to find the optimum setting on the stove.
