Our answer

Nigella's Korean Keema (from KITCHEN) is a quick stir fried dish that uses minced (ground) turkey and adds lots of flavour with a sauce based on spicy gochujang paste, which is made from red chillies.

It is possible to use minced chicken instead and we would suggest, if possible, using either minced thigh or a mixture of minced thigh and breast. Chicken thighs have slightly more flavour and fat than breast and are also usually more cost-effective. Minced chicken breast can end up being slightly dry after cooking, even though it will absorb quite a lot of flavour from the sauce.
