Chilli Jam Ingredient Quantities

Asked by elspeth. Answered on 11th September 2013

Full question

In Nigella's Chilli Jam recipe she gives the weights of peppers and chilli peppers to use as 150g of each. Does this mean 150g of prepared peppers or 150g before I start chopping and deseeding? it makes a big difference, especially for the chilli peppers! Thanks in advance.

Our answer

For Nigella's Chilli Jam recipe (from Christmas and also on the Nigella website) the weights given for both the red bell peppers and the red chilli peppers is the weight before preparation.

Usually in ingredients lists the state of the ingredients is straight after the weight. So 150g red peppers (cored, deseeded and cut into rough chunks) means that the weight given is for unprepared peppers. However if the recipe had said 150g cored, seeded and diced peppers then it would indicate that the recipe requires 150g weight prepared peppers.
