Apologies if this is a stupid question, but do I cook the clementines unpeeled for the Clementine Cake?

Nigella's Clementine Cake (from HOW TO EAT) is a gluten-free cake made with cooked, whole clementines. The clementines are cooked with their skins on and simmered until soft all of the way through. The soft fruits are then pureed, skin and all, to use in the cake.

As you are using the clementines with the skin on, is a good idea to scrub the clementines with hot, soapy water and then rinse well before cooking them. Sometimes citrus fruits are coated with edible wax to protect them and this will remove any traces of wax that may be there.
