Can you use green courgette for Happiness Soup. I really want to try it, but can’t find yellow courgettes.
Nigella's Happiness Soup (from NIGELLA SUMMER) is a vegetable and rice soup that is both easy to make and comforting to eat. Turmeric enhances the colour of the courgettes, as well as providing a unique flavour. This golden combination gives the soup its name, as the recipe introduction mentions the belief that "eating yellow foods will result in laughter and happiness".
Yellow courgettes (yellow squash/yellow zucchini) are available in the summer from markets and some supermarkets. They tend to be slightly more bulbous at the base than green courgettes, but the flavours are similar so you could use green courgettes as an alternative if the yellow ones are not available. The main difference will be in the appearance of the soup, as the golden broth and rice will be studded with nuggets of green rather than gold. And even though it may not be as sunny to look at, everyone will be happy to eat a bowlful.
