Defrosted Christmas Pudding

Full question

I've made mini Ultimate Christmas Puddings and frozen them. Once defrosted, how long can they be kept for? Just in case no one wants one!

Our answer

Christmas puddings, such as Nigella's Ultimate Christmas Pudding (from NIGELLA CHRISTMAS) can be frozen for up to a year and generally it is best to use the pudding within 1-2 days of defrosting. If the puddings have been steamed for a second time then they should be removed from their moulds and kept in the fridge for up to 2 weeks. As they have been steamed for a second time you could also re-freeze them for up to 3 months (if doing this then please re-freeze the day after), but bear in mind that when you defrost them again you should eat them within 3 days and reheat them only one more time. If freezing the puddings then wrap each one in a double layer of clingfilm (plastic wrap) and put in an airtight container. Thaw overnight in the fridge.

If the puddings have not been steamed for a second time then we would keep them in a cold place or the fridge for up to 2 weeks. However, it seems more practical to steam all of the defrosted puddings at the same time and if there are any leftovers then treat them as above. Alternatively leftover Christmas Pudding can be made into Christmas Puddini Bonbons, which can be gifted or enjoyed into the new year.
