Full question
I love coffee ice cream and would like to make the One-Step No-Churn Coffee Ice Cream. But I don't drink so what can I use instead of coffee liqueur?
Our answer
Nigella's One-Step No-Churn Coffee Ice Cream (from NIGELLISSIMA) is a very easy to make ice cream that doesn't need churning and also you don't need to make a custard base.
The coffee flavour in the ice cream is mainly from espresso powder. The coffee liqueur adds a little extra flavour. However, the main reason that some alcohol is added is that it helps to make the ice cream a little softer as alcohol retards the formation of ice crystals. But as the ice cream also contains condensed milk and cream, it does not become particularly hard when frozen and you can just omit the alcohol if you prefer. If you do omit the liqueur we suggest that you transfer the container of ice cream from the freezer to the fridge about 30 minutes before you want to serve the ice cream, to let it soften slightly.
