Does The Old Fashioned Chocolate Cake Icing Keep For A Week?

Full question

I need to freeze the cake and put together for a party in a week's time where there are no facilities. As such I want an icing that I can make, store in the fridge or freezer for 4-8 days, then put on the defrosted cake. Will the icing listed in the old fashioned chocolate cake recipe work for these purposes? And should I use fridge or freezer?

Our answer

Nigella's Old Fashioned Chocolate Cake (from FEAST) is an easy-to-make chocolate sponge with a chocolate buttercream icing that has been lightened with the addition of sour cream. As the icing contains sour cream, we would prefer it to be eaten within 5 days of making.

The iced cake should keep in an airtight contianer in a cool place for up to 5 days. If you want to make the icing in advance of this then it would probably be better to freeze the icing in a resealable container. The icing should freeze for up to 3 months. Thaw the icing overnight in the fridge and then take it out and let it come to room temperature before using it, as otherwise it may be too stiff to spread. There is a small risk that the texture of the icing changes slightly when it has defrosted and we suggest that you beat the icing briefly with a hand-held mixer or give it a quick blitz in a food processor before using it, as this should help the icing to become smooth and spreadable again. However, please note that as we have not tried freezing the icing ourselves, we are unable to guarantee the results.
