I don't cook with alcohol. What could I use in place of the white wine/vermouth for the Chicken With 40 Cloves of Garlic?
Dry white vermouth is used to add a little extra liquid and flavour. If you can't use alcohol then you could replace it with chicken or vegetable stock, or try using 1 tablespoon of water plus 1 tablespoon of fresh lemon juice. The acidity of the lemon juice will mellow as the chicken cooks but will still brighten the rich juices of the chicken.
