Our answer

Nigella's Gingerbread Stuffing (from NIGELLA CHRISTMAS) is a spiced stuffing that is baked in a separate dish and served alongside the turkey (in the US it is called a dressing). This uses spiced gingerbread (we assume you have an egg-free version), or you could use any spiced, sweet bread (if necessary check it is egg free).

Although gingerbread is usually quite moist, eggs are added to the stuffing mixture for extra moisture and to help the stuffing to bind together, so that it can be cut. It is possible to omit the eggs and we would suggest that you replace the eggs with 4-5 tablespoons of vegetable stock to add moisture. However the stuffing will be crumblier and it will be much more difficult to cut, so we would suggest that the stuffing is just spooned from the dish instead.
