Fish For Southeast Asian Chowder

Asked by Eriberri. Answered on 27th February 2020

Full question

Hi there! Can I use white fish for the Chowder With Southeast Asian Flavours recipe? I can’t eat “smoked” anything and my husband hates it! All else in the recipe is great. What do you think I can substitute “smoked" with? Thanks so much.

Our answer

Nigella's Chowder With Southeast Asian Flavours is a quick but hearty soup. It takes inspiration from both the UK and Southeast Asia. Smoked fish is often used in UK recipes for chowder.

You could use another firm-fleshed white fish if you are unable to use smoked fish. Cod, haddock, hake or pollock from sustainable sources would be the best options. It is possible to use salmon, but as it is a fattier fish we don't think it would work quite as well in this recipe and would not be our preferred alternative. Smoked fish usually adds a little extra flavour, so check the seasoning of the soup before you serve it and adjust according to your own taste.
