Fish Stock for Keralan Curry

Please can you tell me what the fish concentrate used by Nigella in the Keralan Curry is and where I might find it? Perhaps there is a substitute I can use? Many thanks Terry.

Our answer

In Nigella's Keralan Curry (from Nigella Summer and on the Nigella website) she uses a concentrated fish stock to add flavour to the sauce, rater than adding lots of liquid with a fish stock and then having to boil the sauce to reduce it. The brand that Nigella originally used unfortunately seems to have been discontinued but you can buy concentrated fish stock in small pots (made by Knorr) and you would need to use half of one of these pots.

If you can't find the concentrate then you can use half of a fish stock cube instead. Just crumble it into the measuring jug before adding the coconut milk at step 4 in the recipe, and then stir well after adding the boiling water to the jug, to make sure that it dissolves thoroughly.
