Is it self raising flour or plain flour in the Totally Chocolate Chocolate Chip Cookie recipe please? Does it make any difference to the recipe ?

Nigella's Totally Chocolate Chocolate Chip Cookies (from NIGELLA EXPRESS) are chunky chocolate cookies generously studded with chocolate chips. The recipe ingredients just state "flour" and this means plain (all-purpose) flour. It is generally accepted that if just "flour" is stated in a recipe then it is plain flour and self-raising flour will always be listed as "self-raising" (for the US self-rising).

It is important to use the correct type of flour as if you use self-raising flour in the cookie recipe then the cookies will spread a lot and end up being quite flat with a cake-like texture. Conversely, if you used plain flour in a cake recipe rather than self-raising then the cake will not rise.
