Can you switch the plain flour in the Damp Lemon and Almond Cake for extra almond flour or another gluten-free flour variety? Which would work best?

Our answer

Nigella's Damp Lemon And Almond Cake (from HOW TO BE A DOMESTIC GODDESS) is a dense and fragrant cake made with a combination of plain (all-purpose) flour and ground almonds (almond meal or almond flour). The almonds give the cake its very moist and tender texture.

We would not use extra ground almonds as the extra oil in the almonds could cause the cake to be a little greasy. As the proportion of plain flour is very low in this cake we suspect that you could use a plain (all-purpose) gluten-free flour or baking mix instead. These flours usually work quite well in combination with ground almonds. However as we have not tried the cake with a gluten-free flour we are unable to guarantee the results.
