Freezing Happiness Soup

Full question

Nigella's Happiness Soup recipe sounds delicious, but please could you inform me if it can be frozen successfully and, if so, please give me best method to do so. Do you omit rice if freezing or is it OK to add it when described in recipe?

Our answer

Nigella's Happiness Soup (from NIGELLA SUMMER) is made with yellow courgettes (yellow squash) and thickened with rice. The soup is suitable for freezing but before you freeze it you should cool the soup and it needs refrigerating within 2 hours of making. Once the soup has chilled, transfer it to airtight containers and freeze for up to 3 months.

Defrost the soup overnight in the fridge then put it in a saucepan over a low heat and reheat, stirring occasionally, until it just starts to boil. Cool slightly before serving. Once defrosted, the soup should be used within 24 hours and should only be reheated once.
