Freezing Mughlai Chicken Curry

Can the Mughlai Chicken be frozen with all of the ingredients in it?

Our answer

Nigella's Mughlai Chicken from FEAST is a mild and creamy chicken curry that has both double (heavy) cream and yogurt in the sauce. Unfortunately yogurt in sauces does not freeze very well as it can separate when it thaws, or when the curry is reheated.

If you wish to freeze the curry then we suggest that you cook it but omit the yogurt at this stage. Cook the curry very gently and you may need to turn the chicken over a couple of times during cooking, as the chicken may not be completely covered with the sauce. Cool the curry and chill or freeze within 2 hours of cooking. The curry should be thawed overnight in the fridge then reheated very gently in a large saucepan until piping hot. Remove the pan from the heat and cool for a moment, then stir in the yogurt. If the sauce is too hot then the yogurt will split and turn grainy.
