Can the White Tiramisu be made in advance and frozen successfully? If so, for how long?

Our answer

Most tiramisu dishes, such as Nigella's White Tiramisu (from HOW TO EAT) can be frozen. We would suggest making the tiramisu up to step 6 then wrap the dish tightly in a double layer of clingfilm (plastic wrap) and a layer of foil. Put the remaining mascarpone mixture in an airtight container. Immediately freeze both for up to 3 months. You could crumble the remaining meringue and freeze it in an airtight container, but there is always a slight risk that the meringue softens when it thaws so you may prefer to buy extra meringues when you want to serve the tiramisu (or check the packaging for the meringues, some will keep for a couple of weeks in an airtight container and this may be within your time frame).

The tiramisu should be thawed completely before serving, so defrost the dish of tiramisu and the container of extra mascarpone mixture in the fridge overnight. Stir the extra mascarpone mixture before spreading it over the top of the assembled tiramisu and scattering over the crumbled meringue. Leftovers should be stored in the fridge and eaten within 2 days.
